One of a sommelier’s primary duties is working with restaurants. I recently trained the wait staff for Las Ristras restaurant in Corrales, NM and will be working on a new wine list for them. The value this added to the restaurant was emphasized by the fact Las Ristras was selling more wine to diners than their wine distributor thought they could. That credit goes to the wait staff that learned powerful techniques for engaging and recommending wines to their customers. That was so rewarding I am now offering those same services to other restaurants from Albuquerque to Santa Fe. Any restaurant that depends on wine sales to help the bottom line will see a great benefit by engaging my services. I am available to provide the following to a restaurant.

  • Work with the chef or owner to develop a wine list that supports the restaurant’s cuisine
  • Create a wine list that helps sell the wine (not done often enough)
  • Train the wait staff on wine fundamentals,
    • how to present, open and serve any type of wine,
    • how to assist the customer in choosing a wine,
    • Understand food and wine pairing concepts
  • Periodic changes to the wine list for seasonal or cuisine changes
